CAPACITY OF BUILDING : CULLINARY ARTS SCHOOL
I have found 1O people who are little bit unlucky from other people for not given a chance to further their studies in the next stage which is university. So that they tend to waste their time with unbeneficial activities such gangsterism[1], ‘bohsia bohjan’[2], vandalism, and not even that some of them get start to take drugs. This should be prevented immediately because its worried to our next generation development.
These people should be given a chance to have education. Its not necessarily once they failed to enrol the university they have failed like forever. Government should responsible to avoid these youth to run away from education. Government should organize a society who have a will to help this people. One of the ways, practical school should be established.
Every people have their own special skill. So why not we brush up their skill to be shine  instead of seeing they are involving into unbeneficial activities. At least they do something benefits. We don’t know how amazing their skills are. Although to those who have no special skill also can learn how to have a good skill. This can give benefits to many aspects, such society, economy and our deen which is Islam.
I have decided to establish a cooking school or can be known as Cullinary arts’. In this school these 1O people can learn how to bake many kind of dishes. I’m ready and committed to serve the society in producing students who will excel in the field of Baking and Culinary Arts. State-of-the-art facilities are set up to make the learning experience conducive and exceptional. My mission is  to produce the finest Baking & Culinary Arts students, and to play an active role in developing our students’ career. In addition they can lead academy in the Baking & Culinary Arts sector in the future, InsyaaAllah.
This school not only will give a second chance to students to brush up their talents but this school/academy also will give a basic education of Islamic knowledge to them. At least we are trying to nuture them to balace between dunya and akhirah.
Moreover, They will also given the chances to exposed with many kind of recipe. Start from east cook, western cook, followed by south and North cook. They are required and educated to cook with only the halal ingredients. This is much worth than other cooking school. In this school, the will be exposed with Islamic values that rarely seen at most of the culinary school in Malaysia.What I’m going to do in my culinary school?
Cullinary is the art of preparing and cooking foods. The word "culinary" is defined as something related to, or connected with, cooking[i]. Why I choose culinary arts?
There are a lot of benefits on learning culinary arts. They will learn about social skills/ cues. They can increased awareness about health and nutrition. Furthermore they can improved communication skills and stress management. Participants learn a life skill that they will carry with them through out life. They learn what a nutritional meal is. They learn to work in a group. They learn fine motor skills, and they learn time management. Two more specific and powerful benefits are: Increased self-esteem, and Brain development.
If we see the job opportunities for a chef, Chefs can find available jobs nearly anywhere they want to go and can enjoy long-term employment once they find jobs that match their skills and interests.
Chefs can work up the ladder by gaining more experience. They can start as prep cooks and become short-order cooks, line chefs, sous chefs, executive chefs and corporate chefs. Some can become culinary teachers while others may choose to work as private chefs for affluent individuals. In addition, a chef can start his own restaurant or catering business and become his own boss.[ii] Start their own cookware and utensil lines, write cookbooks, judge cooking events and work as regular magazine contributors.
What have been stressed out in this cooking class? There are several things that have been stressed out. For example, Safe and good equipment must being used. In addition, ONLY Halal ingredients being used to cook. Cleanliness is also one of the most important thing in this school. Here are some steps of safe food handling and preparation: Firstly, Cleaning and preparing foods : Bacteria can easily spread throughout the kitchen. Before and after preparing food, we have to wash hands, cutting boards, knives and countertops with warm soapy water. Secondly, cooking food : Improper heating of food could mean that harmful bacteria can survive and this could make people sick. We have to prepare foods quickly, cook them well, and serve them immediately. Thirdly, Storing and refrigerating foods : Bacteria grow fastest at room temperature, so keep food cold to reduce the risk of food poisoning. Put leftovers in the refrigerator within two hours of eating. In addition, I give my students a leisure time to perform their congretional prayer. Praying time can train them to be more discipline. 2O minutes tazkirah[3] before start the learning process everyday will be held as well.
Next, What kind of cooking method will be taught? There three basic method that will be learn by the students. First, Dry-heat cooking[iii]. There are 5 methods under dry-heat cooking, They are sautéing, roasting/baking, steaming, pan frying, grilling, deep-fat frying. Sauteing is a method of cooking food, that uses a small amount of oil or fat in a shallow pan over relatively high heat. Roasting/baking is cooking method that uses dry heat, whether an open flame, oven, or other heat source. Roasting can enhance flavor  through caramelization on the food. Steaming ; works by boiling water continuously, causing it to vaporize into steam. Pan frying ; pan frying relies on oil as the heat transfer medium and on correct temperature and time to retain the moisture in the food. Because of the partial coverage, the food must be flipped at least once to cook both sides. Grilling ; cooking that involves dry heat applied to the surface of food, commonly from above or below (as in North America). It is sometimes referred to as barbecuing but that word can also mean a different cooking technique. Grilling usually involves a significant amount of direct, radiant heat, and tends to be used for cooking meat quickly. Deep-fat frying or deep frying ;  food is submerged in hot fat. Deep frying is classified as a dry cooking method because no water is used. Due to the high temperature involved and the high heat conduction of oil, it cooks food extremely quickly.
Second basic method is moist-heat cooking. There are 3 spesific method under moist heat-cooking and they are simmering, boiling and steaming. Simmering ;  foods are cooked in hot liquids kept at or just below the boiling point of water. Simmering ensures gentler treatment than boiling to prevent food from toughening and/or breaking up.  Boiling ;  rapid vaporization of a liquid. Steaming; Steaming works by boiling water continuously, causing it to vaporize into steam; the steam then carries heat to the nearby food, thus cooking the food. The food is kept separate from the boiling water but has direct contact with the steam, resulting in a moist texture to the food. This differs from double boiling, in which contact with steam is undesired.
Third basic method is combination cooking which have consist braising, stewing and sous vide. Braising;  combination cooking method using both moist and dry heat; typically the food is first seared at a high temperature and then finished in a covered pot with a variable amount of liquid, resulting in a particular flavor. Braising relies on heat, time, and moisture to break down the tough connective tissue collagen in meat, making it an ideal way to cook tougher cuts.[iv] Stewing ; combination of solid food ingredients that have been cooked in liquid and served in the resultant gravy. Ingredients in a stew can include any combination of vegetables, meat, especially tougher meats suitable for slow-cooking, such as beef. Sous Vide ; method of cooking food sealed in airtight plastic bags in a water bath for longer than normal cooking times.  The intention is to cook the item evenly, and not to overcook the outside while still keeping the inside at the same "doneness", keeping the food juicier.
            On the other hand, besides prioritize the quality of their cooking. I also take into consideration about their religions guidance. Islamic enviroment. I will try as best as I can to adapt and Islamic environment in this school. We have loads of ‘mahmudah’ deeds. So as a teacher I will ask all my students to be kind at all people. The students might come from a very different background. Some of them maybe not know many of Islamic teachings from their childhood. Or maybe some of them have the Islamic knowledge once upon a time but they have been rusted. Who knows.
In this school they are required to give ‘salam’(greeting) to each other everytime they meet. Salam is important to bind an ukhuwah among them. Furthermore, they should smile to each other whenever they meet. In hadith of Rasullullah PBUH from Abu Zar, whereupon he said: "You smile on the dole The Brother" [ibn Hibban][4]
Hadith above try to explain how worth a smile is. Smile is a charity. So if we not have any money to give to people at least we give them a wide smile. At least we try to chill them. This is one of Islamic lifestyle that we adapt in this school. In Islam, a good deeds also known as ‘mahmudah deeds’[5].  Mahmudah deeds which are Zikr al-maut (remember the dead), Mahabbah (love), ascetic, sincere, thank goodness, patience. These deeds will be applied to the students and they are ruqired to observe these deeds. This is one of the way to show them that Islam is such a peace and the best religion. They will find the beauty of this religion if they practise it everyday. It can help them to improve themselves to be a better individual.
What is the importance of consuming halal foods? Many people don’t see how important halal foods is. If we consumed unhalal foods, might probably our ibadah and good deeds (amal salih) will not accepted by Allah SWT. Many of restaurants nowadays are lack of halal element in their food. They are not even prepare unhalal foods but the chef of the restaurant sometimes are not a Muslims. This show that Malaysia now is lacking of Muslims chefs.  So one of my objective is to teach my students to cook with the halal ingredients ONLY. And as we know, Rasullullah PBUH also loves the halal and clean foods.  
Prophet in a hadith narrated by At-Tirmidhi which says: "All flesh that grows from unlawful food, then fire the hell is entitled to it." The hadith above prove that unhalal foods actually worsen people’s lives whether in world and hereafter. The guideline mentioned above points out that the term halal may be used for foods which are considered lawful. Under the Islamic Law, all sources of food are lawful except the following sources, including their products and derivatives which are considered unlawful.
What are the ways to make sure all the foods are in healthy and halal? Firstly, Halal Meat. When it comes to the type of meat served, we do not serve any type of pork or any meat from pigs. No halal meal can ever include meat from swine and one of the most basic aspects of putting together a Halal meal is to ensure that there is no pork or other pig derivative. Slaughtering. Meat should be appropriately slaughtered and we should not eat animals that are already dead. This means that, whereas Western meat is typically slaughtered some time after being killed, this is not acceptable when preparing food for Halal food catering. The animal should be slaughtered as it is killed before being drained of its blood.
Dhabiha[6], which is the Islamic method of killing and slaughtering, is considered a fast and stress free way for an animal to be killed and all of our halal meat is prepared in this way. Non-Contamination. We avoid alcohol. The consumption of alcohol is completely forbidden and so food should not be prepared using wine or any other type of alcohol, in the same way that alcohol should not be offered with the meal. Contamination is always at the forefront of our food preparation efforts. We use different utensils and items to prepare Halal food and our other catering foods ensuring that the two will not be contaminated.
Halal Food Preparation. The process of killing, preparing, and cooking food in this way is to ensure that the chosen meat is fresh, it is free from impurities, and animal receives respect, and Allah is thanked for providing the food. We take our role in Halal food catering as seriously as you do, ensuring that there is no chance of contamination.
What kind of recipes have been taught in this class?[v] First, Middle-eastern food : Middle Eastern foods usually contain olive oil, garlic, special spices and fresh vegetables. These ingredients create unique aromas and tastes. In addition, Middle Eastern foods are loaded with healthy nutritional properties. Indian food : Indian food is also heavily influenced by religious and cultural choices. Chinese food : Chinese food is healthier. Here is a list of top ten tips when cooking Chinese food. You don’t have to have a wok. Make sure you do not burn your cooking. When cooking and boiling long grain rice, make sure you wash the grains beforehand before you boil it. To thicken the sauce of your sauce-based Chinese recipes, you need to use corn flour. Keep ingredients which can last for a long time in your store cupboard. When cooking Chinese food you are more than likely to be cooking on a high heat right from     the start. If you’ve just made a hearty saucy meat main something as simple as boiled rice will be a delicious accompaniment to it. It is all about a good balance of flavours and textures. There is nothing worse than old meat when cooking Chinese food
We also teach our students how to prepare Western foods using halal ingredients. Lastly, Eastern food, Eastern food such Malaysian traditional foods also taught here. We will start from how to make Malaysian dessert like ‘kuih muih’ because as we know Malaysia is famous enough with their appetizing dessert
What are the ways to produce a quality chef? We want to produce a quality chef first they have to obey the rules and regulation of this school. They should put Islam at the first place when they want to make a decision. As in use clean cooking equipment, halal ingredients used, etc etc. A quality chef can cook many kind of food asked by the society. A quality chef also will always aware of the ingredients being used. Punctuality is really important. They have to cook within limited time.
